How are you? I'm good. It's been awhile.
Today is St. Patrick's day. What that really means for us is that I'm cooking corned beef and cabbage. That's pretty much it. This tradition is somewhat hilarious to me for two very important reasons: 1.) Daniel gets so excited about this dinner every year. Like it's the only time of year corned beef and cabbage can be made. And when I tell him that I can make it on another day, not JUST St. Patrick's day, he sort of shrugs his shoulders as if he was saying, "It just wouldn't be the same." 2.) Corned beef and cabbage isn't really an Irish tradition. It's an American one. I've never heard an Irishman exclaim their excitement for corned beef and cabbage.
Regardless, we enjoy ourselves some corned beef and cabbage on this very green holiday. :)
With that being said and out of the way (thanks for listening to my rant about beef... that is corned) we can focus on my next topic. Traveling. Oh goodness how we wish we could just pack up our bags, jump on a plane and travel the world. How lovely would that be?
There are times where Daniel and I will plan hypothetical vacations. I'll even look up the cost of the plane ticket to our "destination." (Please tell me I'm not the only person who does this?) This morning I was reflecting on my backpacking trip through Europe that I took about 4 years ago. I feel so unbelievably blessed and thankful for that journey. I met incredible individuals and learned so much. And let's not forget, the FOOD! :)
I remember meeting a group of Irishmen and women who were utterly fantastic. They were staying in the same hostel, across the way from us. We heard singing and laughing and glass breaking and nonsense. They invited us in and all I could say was, "You guys are mad." They laughed and agreed. The Irish ARE mad! Of course, in a very good kind of way.
So here's to Ireland. Isn't she beautiful?
